Mifu Stir-Fry Dinner

IMG_5221.jpgAs an avid vegetarian and vegan enthusiast, I am always hunting the grocery stores for the latest and greatest ways to cook delicious meals. This recipe came across my Pinterest and I was immediately obsessed. Originally the recipe calls for tofu, but I substituted with Mifu and made other own adjustments accordingly. I tried this Mifu product a while back at a promotional event in town. It has been years since and I am finally getting around to making something with it. This is long overdue too because it is delicious! After trying Beyond Meat in Iceland earlier this year, I am eager to try more vegetarian alternatives to protein sources local to me in Finland.

IMG_5252.jpgSo the recipe itself is relatively simple. Once you fix up the sauce the rest is just warming up the produce and Mifu.  To start, add all the sauce ingredients to a blender and combine well. A good blender will also aerate the mixture giving it a little more color. I love this sauce so much because it can be used for any sort of Asian fusion dish.

After the sauce is prepared, marinate the Mifu and set it aside. Somewhere between 15-30 minutes should be sufficient. While that is happening, prep your produce! My husband had the idea to add one bell pepper and it made for a nice pop of color and an additional source of vitamin-c. Size matters, so finely chop the bell pepper and leave the carrots to be thinner semi circles. I am all about meal presentation and the ever important mouthfeel.

On a skillet over medium to high heat, add all the ingredients until cooked through. The beauty of being an entirely vegan dish is that there is no worry for undercooking. Depending on how you like your food, you can cook to your heart’s desire!

Once complete, plate the dish with a side of rice and garnish with a lime and sesame seeds. It’s the perfect indulgent meal for any night of the week. Let me know if you make it and if you use any personal adjustments to the recipe!

Sushi Date Night

Today while my husband and I scrambled through the internet hunting for dinner recipes to inspire our weekly meal planning, I finally decided to give up and call for a date night!

Located in one of the more beautiful buildings in the neighborhood, Sushibar + Wine is my favorite spot to go enjoy a meal. While they do have multiple locations throughout the city, I am biased, and adore the Punavuori location.

The inside is something between a pop-up gallery, local design shop, and Scandi interior heaven. Before you even get a bite to eat there is already something to gaze upon to feast your eyes.

For dinner, we had the three rolls from the Maki menu, Spicy Tuna, Shitaki Thai, and the new Cold Smoked Shake Maki roll. I have never had mushrooms in a sushi roll before but I was beyond impressed. No surprise though since I have been digging ‘shroom recipes for about a year now.

Visits to Sushibar + Wine are far and few between, but every time I leave it is always with 100% satisfaction.  The vibe is perfect inside, even for a Monday night date. I hope to convince my husband of more dates in lieu of grocery shopping. Even if it is only for the summer, it is nice to enjoy the neighborhood and soak up all the fun.

Bee’s Wrap

This week I want to share with you all my new favorite sustainable swap! This new piece is something I have been eyeing for months at the whole foods stores and on Instagram. It did feel a bit pricey, to begin with, but since deli culture is such a big part of my life it seemed appropriate to invest. I am so excited to keep this sustainable wrap on hand versus using the single-use crinkle plastic and paper bags provided at the stores.

It is amazing how a little bit of quality can go a long way. Taking a moment to admire the beauty of this product, I am so obsessed with design. The fragrance of the beeswax is also a lovely addition making the moment all the more rewarding in taking produce to-go!

As picnic season is upon us in Helsinki, I am beyond thrilled to have this little tool in my bag at all times in case of spontaneous meals outdoors. Incorporating sustainable options is so simple and only requires the discipline to be prepared. A small task when you make your sustainable supplies such a joy to keep at hand.

Fat Ramen at Hietaniemen Halli

There is nothing better than sharing a warm meal on a cold day. In my case, a very cold week (below -20c as a matter of fact). Regardless, Fat Ramen is simply the place to be, no questions asked!

In other news, I will be spending the rest of the evening with my husband, and celebrating his 29th year. After a delicious meal and a bottle of wine, I am content and looking forward to enjoying the weekend ahead.

Ultimate Green Smoothie

This week I am sharing my current obsession, the ultimate green smoothie! For the past couple of weeks, I have been trying to have one of these bad boys daily. This smoothie has everything too, antioxidants, immune boosting, vitamin galore, green goodness! I tweaked this recipe down to two main factors, one, gotta get your greens every day, and two I need to take care of my joints. If you are interested in trying this smoothie yourself, simply use the infographic I have added at the bottom of the post!

Not pictured are the two most important ingredients, in my opinion, turmeric and cayenne. From what I have read online, these two help joint inflammation. And after drinking this little cocktail for a few weeks, I really notice a difference. I am a huge advocate for eating your vitamins and minerals. Supplements in the pill form are fine and well, but when you can eat what you need, to me it brings the wellness process full circle.

I also prefer my smoothies extra large! This might be a habit from my childhood, but I think things are better when served in a mason jar. So it is a must to make this thing bigger and better. Fortunately, my Vitamix is up for the job. This blender is one of the best purchases I have made in my adult life. Investing in the kitchen can seem a bit boring on the surface, but when it affects your everyday life, there is no going back.

Finally, I would like to address the two unique ingredients. One is the green powder I use. This is a subtle step towards making any smoothie a well-rounded addition to healthy living. I also add nettle. This is new to me as it is a Finnish resource. Ladies, this is packed with iron! I highly recommend you add this to your diet if you are like me and struggle with keeping the iron levels in your body stable.

Besides all the benefits of this fully loaded drink, one of my favorite side effects is the pure joy it brings to my day. I am not a fan of wearing colors, nor do I live somewhere that is vibrant in technicolor nature, so a bright green smoothie like this sure boosts my mood. Top it off with my little reusable straw, and it is a moment of bliss all to myself.
